Buffalo Chicken Casserole

This recipe is awesome if you are craving some buffalo chicken and don't want all the guilt! That's me all the time! Let me know what you think of this healthy recipe! 


Ingredients:

1 pound shredded chicken
3/4 cup plain greek yogurt
1/2 cup hot sauce/tabasco sauce
1 ½ cups shredded mozzarella cheese
-1 box wheat noodles
-1 tsp garlic powder
-1 tsp onion powder
-1 1/2 cups chicken broth (Low sodium)

Directions:
1. Preheat oven to 350 degrees.
2. Grill or cook chicken with any other method and shred using two forks. Set aside.
3. Boil noodles.
4. Mix all ingredients together.
5. Combine everything into a baking dish.
6. Bake at 350 for 25 minutes.
7. ENJOY!!!

Eggplant Pizza

INGREDIENTS:

  • 2 large eggplant, sliced 1 inch thick
  • Jar RAOS tomato sauce
  • Shredded Mozzarella Cheese
  • 3-4 oz fresh cherry tomatoes, sliced
  • 1 cup fresh spinach
  • 1/2 tsp sea salt
  • Pepper flakes, optional
DIRECTIONS:
Preheat your oven to 425 F. In two baking trays arrange the sliced eggplants. Sprinkle the sea salt and bake for 15-20 minutes.
Remove the bake eggplant from the oven and turn your broiler on. Spread 1 tablespoon of tomato sauce over each eggplant round followed by shredded mozzarella cheese. Arrange some fresh spinach and cherry tomatoes over the cheese and broil for 3-5 minutes. Make sure you keep a close look while the eggplant is under the broiler as they can burn really fast.
Serve while still hot. ENJOY!!

I have become OBSESSED with Beachbody ON DEMAND! I love that I get to try different workout programs to find what I like best and what works for me. FREE FACEBOOK CHALLENGE GROUP

Quick and Easy Shrimp Stir Fry

This is a recipe I made up the other day for lunch! I needed to use up stuff we had in the house and was in a rush to eat. I didn't know it would come out so delicious! I made it again today to have my husband try it and see what he thought. HE LOVED IT!! And he hates shrimp! Haha! What I love about this recipe is that you could use chicken or steak if you wanted and it would still be 21 Day Fix approved! Give this recipe a try and comment below on what you think :) 

Makes 1 Serving
21 Day Fix Containers: 1.5 Red, 1 Green, 1/2 Purple, 1 Yellow, 2 Spoons

EASY SHRIMP STIR FRY

1 Red Container Frozen Shrimp
1 Green Container of Mixed Frozen Vegetables
½ Purple Container of fresh Pineapple, chopped
1 Egg
2 teaspoons Coconut Oil
Dash of Ground Cinnamon
Splash of Liquid Braggs Amino (Soy Sauce Substitute)
Chopped Cilantro to taste
1 Yellow Container Brown Rice (I have done this recipe without the rice and it was plenty filling enough)

Preparation:

Heat 2 tspn coconut oil in a skillet over med-high heat. Add Frozen Veggies and Shrimp to pan and cook for about 3 minutes. Toss in pineapple, and cook mixture till pineapple gets a little golden color to it. Add Ground Cinnamon. Remove mixture from pan and set aside. Push Veggie and Shrimp mixture to one side of pan. On the other side of pan crack the egg and scramble. Once egg is cooked mix it with Veggie and Shrimp mixture. Stir in soy sauce and cilantro. Add rice to pan to soak up all the goodness, and Enjoy!!

Best Cardio Class Ever!!


I just finished the best cardio workout EVER right in my own living room! I am covered in sweat, but endorphins are flowing!! I feel FANTASTIC after my TurboFire workout. I struggled to press play after a long day, but I'm so glad I did! I feel 100% better now!

This program is CRAZY FUN! My daughter, Maddie, was dancing along with me and my 4 month old son, Parker, was all smiles watching us smile emoticon If you want to have fun working out everyday and see some amazing results start TurboFire ASAP!! Turkey Meatloaf


This 21 Day Fix Extreme recipe is AWESOME! Every family member approved of this one last night so this will definitely become a regular dinner item! It's easy, healthy, and fast to make. What else could a busy Mommy ask for? Let me know what you think of this recipe below!
TURKEY MEATLOAF
Ingredients:
2 lbs raw 93% lean ground turkey
1 cup all natural salsa
1 cup cooked quinoa, cooled
2 large eggs, lightly beaten
3 garlic cloves, finely chopped
1 tsp sea salt or Himalayan salt
Directions:
Preheat oven to 375.
Combine turkey, salsa, quinoa, eggs, garlic and salt. Mix well by hand or with a rubber spatula. Place turkey mixture into a 9×5 loaf pan and smooth top with a rubber spatula.
Bake for 60 to 70 minutes or until internal temperature reaches 165. Let stand for 10 minutes before slicing into 8 slices and serving.
Servings: 8
Serving size: 1 slice

TurboFire Beachbody ON DEMAND!


Was feeling ambitious tonight and decided to workout again... With Beachbody ON DEMAND I was able to give TurboFire a try. I LOVED IT and am officially hooked!! I was so sweaty afterwards but it was so much fun!! My daughter was even dancing along with me! The music is great and Chalene keeps you fired up throughout the whole workout. If you are looking to lose weight with a fun and unique program this is for you. This 90-day program is packed with kickboxing drills, aerobic exercises, and intense intervals perfectly choreographed to the hottest music, so you stay motivated to push hard and get awesome results. 21 Day Fix Extreme! Starting Round 2

Starting my second round of the 21 Day Fix Extreme program today! So happy with my results the first round I am going another 21 Days!! I will also be trying TurboFire on days I feel like I have the energy to workout twice in a day. This will give me the opportunity to try another Beachbody program. Now with Beachbody ON DEMAND it makes it super convenient to try it out! 

After my first round of the 21 Day Fix Extreme I lost 9.5 pounds! Not only am I lighter, but I'm starting to get more definition in my abs, arms, and legs! It's amazing! But best of all I feel the best I have in a long, long time. I have more energy, feel more confident, and as a result can be a better parent to my children.
