Quick and Easy Shrimp Stir Fry

This is a recipe I made up the other day for lunch! I needed to use up stuff we had in the house and was in a rush to eat. I didn't know it would come out so delicious! I made it again today to have my husband try it and see what he thought. HE LOVED IT!! And he hates shrimp! Haha! What I love about this recipe is that you could use chicken or steak if you wanted and it would still be 21 Day Fix approved! Give this recipe a try and comment below on what you think :) 

Makes 1 Serving
21 Day Fix Containers: 1.5 Red, 1 Green, 1/2 Purple, 1 Yellow, 2 Spoons

EASY SHRIMP STIR FRY

1 Red Container Frozen Shrimp
1 Green Container of Mixed Frozen Vegetables
½ Purple Container of fresh Pineapple, chopped
1 Egg
2 teaspoons Coconut Oil
Dash of Ground Cinnamon
Splash of Liquid Braggs Amino (Soy Sauce Substitute)
Chopped Cilantro to taste
1 Yellow Container Brown Rice (I have done this recipe without the rice and it was plenty filling enough)

Preparation:

Heat 2 tspn coconut oil in a skillet over med-high heat. Add Frozen Veggies and Shrimp to pan and cook for about 3 minutes. Toss in pineapple, and cook mixture till pineapple gets a little golden color to it. Add Ground Cinnamon. Remove mixture from pan and set aside. Push Veggie and Shrimp mixture to one side of pan. On the other side of pan crack the egg and scramble. Once egg is cooked mix it with Veggie and Shrimp mixture. Stir in soy sauce and cilantro. Add rice to pan to soak up all the goodness, and Enjoy!!
