Buffalo Chicken Casserole

This recipe is awesome if you are craving some buffalo chicken and don't want all the guilt! That's me all the time! Let me know what you think of this healthy recipe! 


Ingredients:

1 pound shredded chicken
3/4 cup plain greek yogurt
1/2 cup hot sauce/tabasco sauce
1 ½ cups shredded mozzarella cheese
-1 box wheat noodles
-1 tsp garlic powder
-1 tsp onion powder
-1 1/2 cups chicken broth (Low sodium)

Directions:
1. Preheat oven to 350 degrees.
2. Grill or cook chicken with any other method and shred using two forks. Set aside.
3. Boil noodles.
4. Mix all ingredients together.
5. Combine everything into a baking dish.
6. Bake at 350 for 25 minutes.

Next time I make this I am going to try and add some veggies like onion and celery!

Eggplant Pizza

INGREDIENTS:

  • 2 large eggplant, sliced 1 inch thick
  • Jar RAOS tomato sauce
  • Shredded Mozzarella Cheese
  • 3-4 oz fresh cherry tomatoes, sliced
  • 1 cup fresh spinach
  • 1/2 tsp sea salt
  • Pepper flakes, optional
DIRECTIONS:
Preheat your oven to 425 F. In two baking trays arrange the sliced eggplants. Sprinkle the sea salt and bake for 15-20 minutes.
Remove the bake eggplant from the oven and turn your broiler on. Spread 1 tablespoon of tomato sauce over each eggplant round followed by shredded mozzarella cheese. Arrange some fresh spinach and cherry tomatoes over the cheese and broil for 3-5 minutes. Make sure you keep a close look while the eggplant is under the broiler as they can burn really fast.
Serve while still hot. ENJOY!!
