Makes 1 Serving
21 Day Fix Containers: 1.5 Red, 1 Green, 1/2 Purple, 1 Yellow, 2 Spoons
EASY SHRIMP STIR FRY
1 Red Container Frozen
Shrimp
1 Green Container of
Mixed Frozen Vegetables
½ Purple Container of
fresh Pineapple, chopped
1 Egg
2 teaspoons Coconut Oil
Dash of Ground Cinnamon
Splash of Liquid Braggs
Amino (Soy Sauce Substitute)
Chopped Cilantro to taste
1 Yellow Container Brown
Rice (I have done this recipe without the rice and it was plenty filling
enough)
Preparation:
Heat 2 tspn coconut oil
in a skillet over med-high heat. Add Frozen Veggies and Shrimp to pan and cook
for about 3 minutes. Toss in pineapple, and cook mixture till pineapple gets a
little golden color to it. Add Ground Cinnamon. Remove mixture from pan and set
aside. Push Veggie and Shrimp mixture to one side of pan. On the other side of
pan crack the egg and scramble. Once egg is cooked mix it with Veggie and
Shrimp mixture. Stir in soy sauce and cilantro. Add rice to pan to soak up all
the goodness, and Enjoy!!
